DITCH THE RED BUCKET

In the labs at GOJO Industries, Inc., we conducted a series of demos to visualize these limitations and show the benefits of using disposable sanitizing wipes.

We spilled a milkshake on a countertop surface, the kind of occurrence that is not uncommon at any foodservice establishment, leaving a messy area behind. Using the classic red bucket and reusable cloth method, we cleaned up the spill and then dipped the cloth into the same bucket to wipe down another surface. All appeared clean.
What wasn’t immediately apparent was that the contaminated sanitizing solution in the bucket had spread the food soil to the next surface. In addition, as previous studies have shown, this could have transferred potentially harmful germs.1
UV light shows the reality of what can happen using the red bucket and reusable cloth method. The images reveal the streaky milkshake residue left behind on surfaces that were supposed to be clean, indicating that this common approach to turning tables may not be as effective as foodservice operators think.
We then cleaned the leftover food soils, this time using PURELL Foodservice Sanitizing Wipes. These single-use wipes effectively removed the leftover milkshake residue, providing a more thorough clean while preventing further cross-contamination in the process.
